These were delicious and the presentation in individual cups was so pretty and fresh. I followed the advice on this blog and peeled the carrots and cucumbers into ribbon. I also added thin red pepper spears. I skipped the wasabi and just used plain soy sauce. It was a great way to use up left over salmon.
